This cereal is made of millet kernels by means of removing floral coatings and seed coats and partially or fully removing the aleurone layer and the germ. The germ is removed in 70-80% of kernels. Millet has a round shape with a small hole in the place of the germ. The surface of groats is matte, uneven with a dark spot in the place where floral coatings linked with the kernel. Depending on varietal peculiarities and conditions of vegetation millet may differ in the size of the kernel, color (from pale yellow to bright yellow), texture (from farinaceous to glassy), protein, starch, carotenoid content, structure of ashy elements.
